Descriptions in the simple sorting sheet

We would like to use he simple sorting sheet but we have a few problems with it. In the item description column the description gets cut off and sometimes that is vital information. For example we have two splits with the exact same description. It reads "new yogurt, Greek style, traditional, ho..." I'm assuming that one split is honey vanilla and the other is honey strawberry, but it is really tough when we are at sort and have to figure it out last minute. Is there a way to lengthen the text for the item description or is there something other coops are doing to get around this problem? The other issue is more minor and it is that after each persons name is the number of items and the quantity of each item. It doesn't make sense to have the quantity written beside every name since its the same for every person and it makes the sheet slower to read when everyone is trying to get the sorting done quick. So is there a way for me to modify what's presented there?
